Food for the fall

I haven't had time to talk about food but that doesn't mean that I haven't had time for food.
Cold weather means hot soups, breads, warm drinks and such.  I cooked dinner last night and was really pleased with the outcome.  I wanted Steel head but it isn't in season right now so I settled for Salmon.  Steel head is a type of Salmon but not as fishy.  The Salmon was GREAT and has me thinking about making fresh Salmon Cakes or Salmon Croquettes.  I also roasted a sweet potato and zucchini.  The Sweet potato's that I have are so sweet.  I have only baked sweet potatoes and of course I know how to candy them but I was nervous about roasting them.  I read a few recipes and coated them with a little EVOO and the smallest amount of cinnamon and a little salt on a few pieces.  It was delish.  

I have a recipe to make some Zuppa Tuscana- very similar to what they serve at Olive Garden.  I will post about that one (with pictures) soon!  

I really want to make some cornbread and chili.  The only good thing about this chilly weather is that I can pull out recipes that remind me of my childhood.  My Grammy never made chili and cornbread together (that is something that I started liking in college).  My Grammy would serve it with crackers or Frito's.  

I am seriously considering having a Friendsgiving Dinner Party.  I got the term Friendsgiving from the Real Housewives of New Jersey.  It is basically celebrating a Thanksgiving meal with your friends.  I have a few recipes that are worthy of some special attention.  But then I would have to cook a huge meal, decorate, clean and clean up.  OH Wait.  I like doing all of those things.  Well let me check my calendar to see if I have time.
